Fragrant basmati rice layered with marinated lamb and slow cooked in a sealed pot

This is a much loved biryani that is the crown jewel during any celebration, especially weddings. The lamb is marinated in spices and yoghurt while long grained basmati rice is soaked. The lamb marinade is then layered with the rice and water laced with rose water in a sealed pot and allowed to cook in its own steam. This melt in the mouth combination of tender meat and fragrant rice can be enjoyed with any of our curries.
